Are you able to embedd your fonts in Flash Pro for iOS like you can for every other type of flash project? When I make a textfield a specific font such as myriad pro, embedd it in my library, and compile to my ipod... it shows up as some serif font that is definitely not myriad pro. The text field is a tlf textfield that I added underlining to.
I can't seem to find any information regarding this. Please help.
It should work - provided you have properly embedded the font. This can be tricky, as on the desktop it may look correct when you test it (because it uses the syste font with the same name). It should work though - I'm not sure of the performance of TLF though - I usually use classic text.
Look into the following guidelines too:

In the Advanced ActionScript 3.0 Settings dialog, in the Library path tab, click on textLayout.swc. Below the box that textLayout.swc is listed in, there is a drop down:
Runtime Shared Library Settings
Default linkage: [Runtime shared library (RSL)]
Change that to [Merged into Code]
You'll need to do that for any swcs that are set to use RSL by default, if you want them to work on iOS.
