Can anybody tell me if there is a way to resize a graph non-uniformly and still have the category and value text labels scale correctly?
For instance if I want to scale the graph to be twice as wide, the text inside will be distorted.

It's the default shortcut for the Uniform Text command (see Edit > Keyboard Shortcuts > Other Text). It has been availabe for more than one decade.
To test, just create a graph, scale it horizotally, leave it selected and hit the shortcut. You could also take a normal text object, stretch it and then hit the shortcut.

Excellent thinking! Often graphs are done in a series, for annual reports and that sort of thing; so it's necessary to use a standard type size in all of them.
Non-scaling type would be a brilliant idea.
You might like to make a feature request of the idea. :-)
