My camera does not rotate the photos. Everything comes off the card in landscape orientation. I am trying to figure out how to rotate the photo in photoshop touch. Does anyone know how to do it? I can rotate in the crop view but it keeps the canvas in landscape and crops off part of the photo when I rotate it.

Not sure if you found this already, but after selecting the Layer Move tool along the top, on the bar at the bottom with the Done and Cancel buttons there is an upside down v on the far lefthand side, if you click that you can enter values, if you enter 90 or -90 degrees into the field for rotation that is pretty quick and easy.

As an example, let's say I have an image that's 1600 pixels wide and 1042 pixels wide (note the original dimensions):
-Tap "&" > "Crop"; enter "1600" under "H" in the expanded options. Tap "Done."
-Tap the layer transform tool (looks like a cross); under the expanded options, rotate the image 90 degrees either way on the far right. Tap "Done."
-Tap "&" > "Crop"; enter "1042" under "W" in the expanded optons. Tap "Done."
What you're essentially doing is accomodating the image by first expanding the canvas, then rotating it, then cropping the canvas to the image.
