How can I convert All RGB Colors to CMYK without making rich black text?

Starting with a sRGB PDF, using Distiller Server 8.1 how can I "convert All Colors to CMYK" without making rich black text from RGB black text, (and grayscale images too)?

Working Spaces:

sRGB IEC61966-2.1

U.S. Web Coated (SWOP) v2
