I want to grayscale a color photo and then color one object in the photo without losing the lines and definition of the object...How do I do that?  I think it is called colore blending, but have no idea what tools to use?

If you want to color an object with a color of your choice, try the following:

1. Duplicate the background layer
2. Go to Enhance>adjust color>remove color
3. Make a selection of the object (the rear of the car in my print screen) with one of the selection tools
4. Go to Layer>new>layer via copy
5. Open a solid color adjustment layer above the layer with the object, and select the desired color
6. Clip the two layers (press CTRL+G)
7. You can cycle through the blending modes and change the layer opacity of the adjustment layer to suit

Here I reduced the layer opacity to 66%, and using a black brush hid the red color over the license plate

That works technically, but one is restricted to the color presets in the smart brush tool, the one with the gears.

The range of colors available via the color picker is vastly superior, in my opinion.

That can be easily done.

Here's the original image:

1. Use the Smart Brush tool as I described, with the "Reverse Effects...Reverse Black and White" mode and the "Inverse" box checked.  Switch back and forth between the "Add" and "Subtract" modes to get a good selection.  You can also switch to the Detail Smart Brush tool with the same options to precisely paint the image in problematic areas.  When you're finished, the image will look like this:
   
2. Depending on what you mean by wanting the lantern to be "paler", you'll use a Hue/Saturation adjustment layer and adjust the Saturation and Lightness sliders to suit.  I used a Saturation of -37, and a Lightness of +26.

Much easier way to color a B*W pic...thats if you have the picture you want already in the color you want.  PSE > Under Edit mode...GUIDE then scroll to the bottom >Click Style Match, it will double your pic both in there own window..side by side add any type of b&w pic from google or wherever then>transfer tones and all your pic is b&w form ..use the sliders to adjust the clarity,intesity and details if you want....then > click the style eraser and erase over top of the part you want colored...you make an error no worries .....use the style painter brush to correct it. HTH..
