I have tried googling this and am able to save each artboard as a jpg but not as an eps or ai file.
Can anyone help?

In one of the save dialog boxes there should be a checkbox "Use artboards". Turn it on and then enter the artboard #

Didn't notice the checkbox saying 'use artboards' at the bottom of the window when 'saving as'.

covers basics, saving out artboards and the artboard panel.
The easiest solution is to use the multi-exporter script that Matthew Ericson has written. I use it to export either layers or artboards as seperate EPS files for print or PNGs etc.
