User testing is showing that my users are very confused when the default player navigation controls pop up at the top and bottom of the screen. Since it pops up whenever anyone touches something that is not a control, the user feels like they (have broken something).
Is there any way to disable this or at least minimize its appearance? Is there a way to customize its look?
Ideally I would ike to have a labeled button somewhere that brings up the default player nav.
Short answer: no.
All the things you say are requested since day 1 (or at least since a
year), but do not seem to catched any attention or desire by adobe. I will
support your request and ask the question as well. I really would like to
see some more options regarding viewer chrome.

I agree with you on this one. If they would just have an option that when you touch none interactive section maybe just the home button appears.
I rarely use that navigation system and the people that I have tested ralley know what to do when it pops up. If the page number came up instead of a slider, I think people would get it. Plus instead of icons have text. Table of content, home, back.
