Organization??? What is the difference between a Catagory and a Tag?

What is the difference between a Catagory and a Tag? How would I use them differently? After 2 photograhy courses this year, I have racked up 10,000 photos. I don't know the best way to organize them. Now they just go automatically into folders by date downloaded. I have been tagging some by NATURE, FLOWER, BIRDS ...but I need a better system. What do other people use? (I do backup to an external hard drive.)

    A category is a collection of tags (and/or subcategories).  It's a way of organizing your tags.  E.G., you can have a "People" category and under it have a subcategory of "Relatives" and a subcategory of "Co-workers", etc.  Then you can put the tags into the appropriate category.
