The instructions say <<< In the Background panel, select the Background Color option and click the color swatch to choose the color. >>> But I can't seem to find any way of changing the background colour from the default, white. Help! (I want black.)
Select the text box - or a piece of text inside the box - and then choose the preset in Type.
In other words, inside a text box you can apply different presets to different lines. But it gets messy.
Also, note that Ctrl Alt A / Mac Cmd Option A selects all the visible text boxes. By "visible" I mean if you're in Book's Grid view it selects every text box on every page, but if you're in two-up view it selects all the text boxes on those facing pages. It's a less fiddly way to select the text boxes.
