The "Encrypt All Document Contents Except Metadata" option is useful when the PDF document being encrypted might be searched with a tool that examines XMP metadata.

For Acrobat, neither Adobe PDF iFilter nor the Find or Advanced Search commands in the Acrobat application examine a PDF document's XMP metadata.

The XMP metadata isn't searched but the regular document metadata is.

I forgot pw which I activated for my documents to protect. I just wanted block editing them but I also blocked "save" button. Now I want to remove it but I forgot my pw. Is there a way to learn my pw or remove it permanently?

Can I prevent people from printing unless they have a password? Or am I restricted to no access, low res and high res?
