Halp! Can't adjust video settings in Flash Media Encoder live - Mac OS

Hi - I've got the white macbook intel core 2 duo, and whether using the built in isight web camera, or my HD creative labs webcam --- I cant' adjust the video settings.
When I click on the wrench icon next to Video\Device, the pop-up loads, but I don't have the ability to select/edit/adjust the color or mechanics -- those tabs are grayed out.
This is a huuuge issue for me, because my webcam keeps auto-focusing and I need to turn auto-focus off to properly record concerts (I work with artists to record and live-stream their events).
I am on OS X v. 10.6.8. Any thoughts? Is the media live encoder just screwed for Macs or is it a driver issue? Here's a screen shot of what it looks like, note how the tabs at the top don't quite look right. I tried re-installing media encoder but still the same issue.
