Add a second Fill

I'm following this tutorial in how to make a ribbon in Illustrator, but I've become confused to the second part of part 7. Where the person says:

 

"With the text selected, go to the Appearance Panel and add a White fill, and then a fill in a dark shade of the ribbons main color...".

 

I've changed one fill to white, but I don't have the option to change a second fill. If I change the Stroke colour, it doesn't look like the text shown in the screenshots. Can someone please explain what I need to do?
