Scan in Acrobat X to Adobe Reader

Can I, and if so, how do I scan a book using Acrobat X and a flat bed Epson V700 scanner to create a file that works in Adobe Reader?

Scan it as a PDF file? I think this should be an option of the software of your scanner.

But of course Acrobat X should also be able to do that; it may even scan the book in OCR mode and produce a valid text document.
