I am new to Adobe and have been tasked to learn Captivate 6 in an effort to enhance our eLearning development team, i am familiar with your competitor Articulate, but from my research Captivate is the better prodict for functionality, however: I have found the tutorials rather hard to understand, is there any video tutorials (similar to this website http://community.articulate.com/tutorials, Yes your competitor i know but they are easy to understand and follow) which are developed for the "new guy" as the tutorials i have been looking at assume the viewer has a basic understanding of Captivate

You can download a PDF of multiple captivate resources on my website here: http://captivatecrazy.blogspot.com/2012/04/download-pdf-with-links-to- captivate_9412.html
Hope that helps
lynda.com has a very good introductory course called Captivate Essential training. It seems to provide a comprehensive overview and is understandable by a novice Captivate user.
You mentioned videos, but as far as a book, I've made a lot of progress with this (found on Amazon):
"eLearning Uncovered: Adobe Captivate 5.5" by Diane Elkins and Desiree Pinder.
Even though I'm learning v. 6 I've found it very useful.....it assumes you are starting at the beginning.
The chapters are very well divided into logical features, with many tips and screenshots throughout. Here's a list of chapters:
1: Getting to know captivate
2: Creating new projectss
3: Adding and managing slides
4: Adding content objects
5: Audio and video
6:Object properties
7. Actions and interactions
8: Editing software simulations
9: Variables and advanced actions
10: Questions and quizzes
11: Special tools and wizards
12: Publishing
Appendix: tips for Mac, keyboard shortcuts, etc
A big THANKS for those.
However lynda.com doesnt appear to have caught up with Captivate yet because everything appears to still be 5.5, I have tried using 5.5 to learn Captivate 6 but it became too confusing, in the same sense i have found the Adobe website a little difficult to navigate around and also the Tutorials by Doctor Partridge and other eLearning evangelists all assume there is a basic understanding of the Captivate program which doesnt help the beginner like myself.
