I have created a curriculum of 100 Captivate assignments for a high school class. What I want to do is have translation available, and I would really like students to have the option between 2 or 3 languages (Spanish, Chinese and French).
Is there a simple way to do this that would save me time?
I realize a rollover sidelet will work, except that it won't work on question slides. Every one of my assignments has 25 questions so that is a lot to not have translated.
Any suggestions?

You should be able to export all the text content of the CP file to XML, have that translated, then import that translated XML into a copy of the original project.
Unfortunately, there's no way to dynamically switch languages within Captivate. You could 'fake it' by have a first set of slides all in English, the next set in Spanish, etc...then have a 'select your language' on slide 1, which jumps to the proper set...
...but that's awfully inefficient. Surely better to just have 1 version of each lesson in each language and have the users select their preferred version of the lesson from a parent web or LMS page...
I agree with Erik, that it would be best to have different files for languages, and have a 'mother' file where the student chooses the language and is navigated to the proper 'daughter' file.
For translating (have students in Dutch, French and English) I will use the export/import to Word mostly. It will take almost all the text. Beware: keep the same filename both for the Captivate as for the Doc-file.

If you have a mother file where the student chooses the language would the LMS be able to still grade the assignment as a single assignment? The way I am currently set up I could have different assignments A1-- English, A1--Spanish, etc. but each assignment would show up on my gradebook. Granted, assignments that are not done will not be factored into the grade but since I have 100 assignments not counting all the other work we do, doubling or tripling this is really not feasible. We have to print out itemized report cards for every assignment. This would completely confuse parents and my report card is already 3 times bigger than others, this would make it book size.

Hopefully Lilybiri won't mind my expounding on this a bit.
Unless something very recently changed, you need to be very cautious with the workflow she recommends here.
When you export the document with the text to be translated, Captivate will only recognize *THAT SPECIFIC DOCUMENT* when you go to import it back in. So if you exported the document and sent it for translation, *THEN* copied the project, the new project won't accept the translated document because it wasn't the project used to create it.
The workflow should be this:
Take Project A (in whatever language) and perform a Save As to create Project B.
From Project B, export the Captions and Closed Captions.
Send the Word Document to be translated.
Don't touch Project B.
Receive the document back and import back into Project B to update the translated text into the Captivate areas.
The same may hold true for the XML bit. But I'm not certain.
