You can disable the welcome screen. See this picture (click on it to magnify it) and the RED framed Checkbox on bottom left corner:

In the above welcome screen, I would like to delete items under the "Open a Recent File" heading. Can you tell me how?

The method I used was not exactly a Dreamweaver function. I use a PC and I edited the registry. It is not to difficult. regedit, users, software, adobe, dreamweaver, recent files and there they are. Files are identified easily. Zap the ones you don't want. It works great.
