How do I change the font and the size of the text when I using "Add Text Box"?

On the related Help web page:

From the "Add a text box" list.
    Number 3.
"Choose View > Show/Hide > Toolbar Items  > Properties Bar, and set the color, alignment, and font attributes for the text."

    Be well...

Why do text boxes sometimes appear vertically, only one letter wide? Having to reshape them to fit the text is annoying. What am I doing to cause this?

Just to clarify, they seem to start out fine--I select text box in the Drawing Markups area but as soon as I start entering text, the box jumps to a vertical shape.

is there a way to keep the property box open at all times or do i have to go to Show every time i need to use it.  Also, within the text box, if I hit enter to provide a space between lines as soon as I close out of editing the spaces all go away.  Both of these things we available in the last version of adobe i was using and can't understand why you would take things away from the program that were previously available.
