What I want is a dead simple contact form. Site visitors enter their email address, name, and message. The client receives an email and is able to easily reply.

Maybe I'm missing something here. Those forms seem to send workflow notifications to the client.
I created a basic form that just emailed the data. But the email the client receives is in an unfriendly table format, and the client can't reply to the email.
That simple form to emial feature can't be customised so that the Reply-To email is set to the customer's email. If this site is a full solution site you may want to enable CST for this client. All conversations will be stored in cases and site admin can simply click reply on emails to email back the customer.
