Your client is wrong, and incredibly out of touch. The so-called problems with stylized type haven’t existed for at least a decade, and only affected the styles Bold, Italic, and Bold Italic. Just keep doing what you are doing and you will not have any problems.

LOL, yup, we allll know that! Well, all except them. Im so furstrated by it. I also have to alphabetize swatches for them. Ugh. So, no trick to get around this? I wonder why that all caps button doesnt get highlighted when you manually select UPPERCASE under type.

Because that’s not a stylisic change, you are actually replacing the selected text with uppercase characters, the same as if you retyped it.

Yes, Edit > Keyboard Shorcuts... as Scott suggested. Create a new custom set, and assignethe shortcut of your choice under the Type Menu.
