I purchased month-to-month subscriptions for my eLearning consultants. If a consultant leaves or a contract ends, how do I deactivate the product from the consultant's machine?

You can deactivate the Captivate license via the Help > Deactiveate menu item. Then you will be free to reactivate it on a different machine. But you need to do it on the consultant's machine BEFORE they disappear, or else contact them to do it for you.
Monthly subscription licenses are now annual licenses.
