How do you HYPHENATE a word in In Design CS 5.5 ?
I understand how to apply "NO BREAK" — but how do you force a hyphenation ?

Put your cursor where you want the hyphen and hit the hyphen key.
Or are you asking how to control where the hyphen will be inserted when a break is necessary but not when the word doesn't need to break, which is not the same as forcing a hyphen. That's called a Discretionary Hyphen and can be inserted using the context menu to Insert Special Character > Hyphens and Dashes > Discretionary Hyphen.
You can also add preferred hyphenation to a word and add it to your user dictionary.

By the way, I notice that Em-Dash (SHIFT OPTION -) is very different than discr. hypen: SHIFT APPLE -
A non-breaking hyphen does not break, but the word may still be broken at any other point. "2-Acetoxybenzoic acid", to name any random non-lethal chemical compound, looks odd when the "2" gets separated from the rest; but since it's a rather long word not to hyphenate at all, you would use the non-breaking hyphen.
Of course you could just select the "2-A" part and apply No Break to it; but inserting a non-breaking hyphen is slightly less work.
