Restoring a catalog in elements 7 on a new PC

I've just updated my PC and have moved my photoshop elements catalog from my old computer to the new one following the backup and restore instructions on the Adobe site. The process has worked okay with all the pictures (including raw files) being visible in photoshop organizer on my new machine. However, the indvidual folders and the picture files within these folders are not present in the 'my pictures' folder of my new pc as they were on the old machine. I know the Adobe instructions state that this will be the case and that the folder structure will be flattened. My question is therefore can I retore the original folder structure I had on my old machine with each picture in the folder it occupied on my old machine? If so, how is this achieved? My old machine ran XP and the new one runs Windows 7. Thanks in advance for any advice.
