Adding a second fill to text

Whenever I go to appearance panel menu > Add new fill when text is selected, the add new fill button is grey and I can’t add a second fill. Anyone know why this is? I can add a new fill to shapes, but not text.

 

I'm probably doing something wrong, or it's a simple thing to fix -  but I can't figure out why it's not letting me add a second fil.

    Select the whole text object, not its characters. You can apply additional fills/strokes at the object level, not at the character level.
