Importing/Exporting .pdf

Hello! I originally asked this in PS for Beginners, and a very nice guy was trying to help me but wasn't familiar with Elements. He suggested I post my question here in the hopes someone might be able to help me. I have some scanned .pdf files that I need to edit and then upload to use in a photo book. When I open them in PSE 11, I get 2 options. 1. Pages (Rasterize) which keeps the image around the original size when I export as .jpg and 2. Images (Extract) which ends up being about 3 times the original size. (See screenshots below) I'm wondering what's the difference between the 2 options and which, if either, is better quality for printing? I'm trying to prepare to make a photo book for my Grandpa who doesn't have a lot of time left. Thanks so much!
