eCommerce attributes - Javascript pullout info and display

For my products in the shop I would like to pull out the product attribute options and then re-format the layout.  At the moment I have 15 dropdown attributes and I want to list them in groups of three. 

It is a weekly meal order system:

Attributes:

Mon-Main

Mon-Side

Mon-Dessert

Tue-Main

Tue-Side

Tue-Dessert

Wed-Main

Wed-Side

Wed-Dessert

Thu-Main

Thu-Side

Thu-Dessert

Fri-Main

Fri-Side

Fri-Dessert

Instead of one big list of dropdowns which is pretty ugly, I would like to put the three attributes for each day in a grid/group with a title for each day.

I think this can be done by javascript, but don't know where to start (or I don't want to start if it is not possible)??

Use checkboxes instead, and style them to display the way you want them, except that checkboxes will allow multi-selection unless if you JS them to not do so.
