when i set a CMYK value to C-10 M-10 Y-10 K-100 and chilck to another color and come back to that value it has changed to C-71 M-68 Y-65 K-79 why is it doing that?

Sounds like you're mixing color modes.

Make sure that the Document Color Mode and the Color Mode of the Color panel are the same.
