I have microsoft office 2003.  When I converted my files the extension for Word is .docx & excel is .xlsx.  What version of Word/Excel is this?  Can I get conversion for office 2003?

DOCX and XLSX became the default format for MS Word and MS Excel with Office 2007.
Both are Office Open XML formats.
    A reference for details:
    http://en.wikipedia.org/wiki/Docx

With Acrobat XI installed you can export PDF to DOC, DOCX, XLSX or RTF.
If you use Adobe's online subscription service ExportPDF you can export PDF to DOC, DOCX, XLSX or RTF
Office 2003 Word can open DOC and RTF. You'll need Office 2007 or better to open XLSX.

However, using Acrobat Pro you can export selected tabular PDF page content and export that to CSV.
Excel 2003 can open CSV files.

    Be well...

Microsoft also has a plugin for OFFICE 2003 to convert to and from DOCx and XLSx files. As mentioned, you can also just export to DOC and XLS, probably the simplest method.
