how can i select a full document [8pp] and create text to outlines?

I am working on an 8 page booklet [document] and I want to select all pages at one time and carry out a "Create Outlines" to convert the text for print.

Any help appreciated...

    Absolutely. Deliver the file as a PDF with the fonts embedded. Outlining fonts is VERY old workflow, and if your printer insists on it you should very seriously look for a printer with an up-to-date workflow.  The only way other than a script that I can think of that would allow you to convert text to outlines on more than one spread at a time would be if the text is a single story and you used Select All to select it.  BUT, there are still better ways to make outlines if you absolutely, positively have no choice. Creating the outlines during transparency flattening will preserve things like bulleted and numbered lists, and applied underlines, which will otherwise be lost.
