What do you mean with "YOUR" default fonts?

How do you want to remove them? From the menu? Uninstall them from the OS (as far as techically possible), from the default fonts setting? Redefine your basic paragraph style when no document is open. And select the redefined style when no document is open.

InDesign CC will allow you to designate fonts as favorites and show only those in the list if desired, but this is a new feature and not available in earlier versions.

I'm guessing you don't want to actually uninstall any fonts because you might need them in other applications (or they are system fonts), so the short answer is if the font is in the Windows Fonts folder or the private Adobe Fonts or InDesign Fonts folders, it's going to be in the list and there's nothing you can do to change that.

Be careful redefining the Basic Paragraph
