Moving eLearning Assets folder to a drive with more space?

By default, Captivate 7 seems to have installed a large eLearning Assets folder to My Documents (Windows 7 machine).  I didn't notice any options during the installation that would let me direct it to save files, and the cache, to a different drive.

I'd like to move this folder out of My Documents because My Documents, for me, is on a networked drive with very limited space.  Just cutting and pasting the files out of My Documents onto my hard drive doesn't seem to work.  Help please!
