I've created publishers for two different sites. On my Admin
panel, I can see the activity for each site along with the invites
being sent. Will the status be updated in the InContext Admin panel
for each site when the invite is accepted? Will I also see
editing/publishing activity for each site? So far, the system seems
to work quite well, I'm not sure what information I should be
seeing on the admin panel. Thanks.

Yes, your description is exactly what you will see in the
"News" section of the Admin Panel... You will see all activity
related to a site, including draft publishing, saving, invitations
sent, and invitations accepted. The list will include activity from
each user - organized by date.
