I don't fully understand your question. Are you trying to add/create a new font? When you mean font list, are you just trying to change names?
I used this article long time ago that teaches you the basics on how to generate fonts. You can't particularly create fonts in Illustrator but let me know what you think:

When you open a file that has fonts that are not loaded
on the current machine, Illustrator says it will substitute them.
I want to be abel to control what fonts get substituted to what. I need this to be standard and not have to go to Find Font to complete the task
You can't unless you set up a character and or paragraph style and select that.
There is a learning curve here as well and Illustrator is not the best application at handling this feature though it should really be far more robust and the setting of your own default font should have been a feature 10 versions ago.
I think almost everyone would like this and they have just gave up requesting it. I have been here since version 8 and…what's the use!
