Missing Menu Items in Acrobat Pro 10

I want to used some advanced features (like batch processing) and all of the help files keep on saying to go to the menu bar and select advanced.  In fact, the screen capture and videos all show a much longer set of selections along the top of the page then I have.  How do I get the full set of Menu Choices?

    The GUI of Acrobat X is radically different to previous versions. Most of

    the tools have been moved to the Tools pane on the right, including the

    batch processing options (now called Actions).

    There's no more Bath Processing. It was renamed Actions. All the things

    that were available under batch processing are now available in the Action

    Wizard, and even more... What specifically can't you find?

    Create a new action and add an Encrypt command from the Protection menu on

    the left. Under the command's options you set the Security Method for your

    files.

     

    It's not possible to prevent someone from downloading or copying a file

    from within the PDF itself.
