JAWS accessibility in forms

I am trying to make an Acrobat Pro form JAWS accessible. Every time I change the text in the form boxes and save them, then go to the form view, the boxes do not read the new text. They still read the old text. If I save the document and close it and reopen it, then go go to the text box edit view, all of the text in the boxes have changed back to the way they were originally. What can I do to get these changes made and stay changed? and read correctly?

Also, part way down the form is a large section of text only and at the end of the form there are three pages of a text document. I need Acrobat to read these also, not just the fill-in the blanks of the form. In Word, when you protect the document it lets you check sections to protect and not protect. How can I do that in Acrobat, so JAWS will read everything?
