if I use a FormsCentral paid account to create a pdf that I want to save to my HD and email to people for them to fill out and return to me, does anything happen to the pdf file if I cancel my paid account?

Depends. If your PDF doesn't contain a FormsCentral submit button then the PDF will keep working as it does today even if you cancel your FormsCentral account. If on the other hand you created a "Submission-Enabled PDF" then the submit might fail after you cancel your FormsCentral account.

If I just want to create a PDF to save to my PC and print,for later use, will that no longer work once my subscription is cancelled?

That will continue to work. If you had a submit button on it then that would be constrained by the 50 limit mentioned above.

I created a couple forms in a free trial account to test it out. The free trial will end Jan. 4 but I want to send my form out Jan. 1 and leave it open till at least Jan. 19 so I wanted to cancel the current free trial and start another one. Can I do this and not lost the forms I've created?

I had a paid Forms Central subscription that recently expired. I just re-subscribed but my previous forms aren't there?

I already own the desktop version of Acrobat Pro XI.

What is the best FormsCentral subscription option for me?

I will be working with a church group of less than 300 respondents but will need more than 5 forms.

Hi drdocument;

If you need more than 5 forms at a time then you'll want to look at the Plus plan, which is actually cheaper over the year than the Basic plan anyhow and you get more. The Plus plan is billed annually rather than monthly which is why it is cheaper. The Plus plan sounds like what you would want.
