You can use this code to generate a plain-text file with the form data:

this.exportAsText();

I'd like to set up a button that will export the contents of a completed pdf form to an Excel spreadsheet or text file, similar to the "Merge data files into spreadsheet" choice on the More Form Options drop-down under Tools/Forms.
