Hi, I live in Australia and was wondering what the best colour settings would be for Photoshops CC 2015.5

Just leave everything at default settings, don't change anything. Your working RGB isn't really important - the embedded profile in the document will always override it (as long as you don't change any policies!)

For CMYK you need to use the profile that corresponds to the actual press and paper used, as well as what regional standard the press is calibrated to. Always ask the printer. CMYK is for offset presses only, and if you don't do that kind of work it's moot.

I will most probably be using someone like office works at the moment to do my printouts will these settings still be suitable?

Unless you have special requirements or do specialist work, don't change anything. Just leave it as it is.

As for what "special requirements" are - if you don't know, you don't have any. When you need to change anything, you'll know why.

Office printers will not use CMYK profiles, they assume RGB input and do the conversion in the printer driver. The settings will be fine. By the way, why are you using such a relatively old version? If you use Photoshop CC2015.5, it means you have a CC subscription and so you can use the latest version (Photoshop CC2018).
