Hello all,
Have a user who creates her own PDFs from Word documents and uploads them to a WordPress website. The PDFs appear fine in all respects until they get uploaded to the website. Thankfully everything appears fine on the front end, but on the back end the previews turn completely black wherever there is text or where text can go based on the margins set by the Word doc - graphics are unaffected, and text in colors other than black show.

This only started happening in the last couple weeks or so, and she's been creating PDFs the same way for years. I cannot replicate this issue other than with the PDFs she creates - PDFs I've made, other staff have made or third parties have made don't exhibit this problem.
Any ideas on how to solve this issue?

Sorry for the delayed response and inconvenience caused. As per the description above, one of the users getting a black preview of a PDF file when uploaded to a website WordPress, is that correct?
Please ask the user to install the latest patch/update from help>check for updates, reboot the machine after installing any updates and see if this brings any difference.
There are no such settings in Acrobat to change when you upload any PDF to a third party website that is WordPress. As you have already mentioned that the issue is not reproducible in-house. And there isn't much we can do with the third party website backend settings.
Is it specific to one PDF file or the black preview is with all the PDF files? Is it possible to share a sample PDF file and a source Word file with us so that we can test it at our end?
