Creating a Composite Image

I'm at a loss to understand how to create a composite image. I've watched Adobe tutorials and taken copious step by step notes.  When I try it, nothing seems to follow or look like the script.  It all falls apart in Select and Mask.  The screen and functions don't quite look or act as advertised.  I'm running Photoshop CC and it is up to date. I can't believe it's this difficult. What can I be doing wrong?  Is there a fail-proof method or tutorial that can show me what I should be doing?
