Is it possible to configure Lightroom Classic CC to view or filter photos by a specific EXIF tag that is not normally displayed in Lightroom's metadata panel? Example: iPhone photos have an EXIF tag "Custom Rendered" (0xa401) that marks a photo as HDR (3) or Panorama (6).

You can't use built-in features of LR, but you can use the Any Filter or Data Explorer plugins to search EXIF and other metadata fields that aren't included in LR.

Take a look at the EXIF data in an app that will show you all the data and which sections they are in.

LR tends to read nothing (or extremely little) out of the "maker notes" section.

I use exiftool to find photos by more exotic EXIF tags, but that's not integrated with Lr, so one of the plug-ins @johnrellis mentioned will be more helpful. Thanks!

Both of those plugins use ExifTool internally.   Here's an Any Filter query for finding Custom Rendered = Panorama:
