In that case go to File - Save As Other - Spreadsheet - Microsoft Excel Workbook. Don't expect the results to look anything like the original file, though. The two formats are very different from each other.

Unfortunately the  Save As - Spreadsheet - Excel is shaded out. Do these options need to be "turned on"?

No, they are enabled when they can be used. If it's grayed out that means the file has some kind of protection that prevents it from being exported to that format.

Go to "Prepare Form" mode.  Then from the menu on the right hand side of the window select "Export Form Data" or "Merge Files into Spreadsheet"
