Hello,

In order to be faster, i wish to have a personalized icon in this windows:

In the right i wish to remove "raccolte" for example, and insert a folder i want. How can i do this?

This has nothing to do with Acrobat. It's a system setting. As mentioned, try searching the web. It's important to mention your version of Windows, as these settings can vary.

I think Microsoft are right. You cannot add folders unless the app gives you a way to do this. It is very unusual for an app to allow you to add new folders. You can make a feature request for Acrobat here Feature Request/Bug Report Form
