I am a beginner and was asked to change a psd file but the text is in channels....I have never worked with them!!

Text is visible in channels but text can be part of the image as rasterized part of some layer or as the text on the type layer. Can you post a screenshot with the Layers panel visible?

But in General : when you have something in your channel is is rasterized!
You can do effects by loading selection of text. But need to know what do you need it for?
