This is beyond the scope of this forum, but you may want ot have a look at Altova's XMLSpy or Liquid's XML Studio. I personally like XMLSpy but that's a personal choice. Of course there are many others.
For creating a schema AFTER creating a PDF form, a common procedure is as follows:
1) in LiveCycle Designer ES, save the form as a static or dynamic PDF
2) open the form in Acrobat
3) export the form data as xml (Forms > Manage Data > Export Data)
4) in XMLSpy open the xml and generate a schema
Note
1) do not fill the form in Acrobat before exporting the data (XMLSpy will use the data as the basis for creating schema restrictions)
2) I personally do not like the way XMLSpy generates schema (it VERY verbose) so I ultimately edit the schema, but it is easier than starting from scratch
