In Windows, right-clickng the PDF and selecting "properties" brings up a menu with three tabs: "general", "pdf" and "summary"
Data entered via the "summary" pane is stripped, but data entered via the "pdf" pane is retained. Right-clicking a PDF file on a Linux machine and looking at the properties shows the pdf data, albeit displayed slightly differently.
