Apply a hue/saturation filter, add a keyframe at the beginning and take the saturation all the way down. Then add it back in with another keyframe.

Sorry to ask this question, but where would I find the hue / saturation filter you are talking about, I am looking in the color correction
areas and can't find it.
I did a bit of Googling, and even typed in "hue" into the search bar in Premiere and there's nothing, so it's a sub-set but which
filter are you thinking of ?

I do not have CS4, so it might have been added. PS does have this as both an Adjustment and as an Adjustment Layer choice.
In my version, I would use the B/W Effect, but then use the Razor, between where I wanted that Effect, and the full-color version, and then just add a Cross-Dissolve.
Again, maybe CS4 has added the Hue & Saturation Effect, but I do not have it.

Dennis said, but it does have HLS controls, and animating the saturation
parameter will do the trick.
