Why is this PDF reporting font data when they have been removed?

Hello! I am trying my darndest to get a simple PDF with forms to be smaller via the PDF Optimizer tool. Here is the oddity: The file audit shows that roughly 73% of the file size is made up of font data:

BUT, I have stripped out all the font info. See? Nada:

And on top of it all, if I resave the same file multiple times without making any changes it gives a different file size each time, usually getting larger and larger. So weird!

I suspect that perhaps the fields in the document are secretly keeping font info. But its a standard system font (Arial and Arial Bold) so, a la Flash, I would love to just reference the user's host system version of the font if that is a possibility. Dunno... kind of grasping at straws here.

Anyone with any ideas on that and especially how to truly strip the font info out?

      TIA!
