Hi there
Updating the final help depends a lot on what type of help you are delivering.
For any format you are using, you first make the changes, then compile or generate to create the output file(s).
For locally installed formats such as CHM or AIRHelp, you then have to distribute to the end user. The end user then either installs the help (AIRHelp) or copies the CHM and replaces the one that was there before.
For WebHelp, FlashHelp or Web Based AIR Help formats, you typically just copy the files to a centralized Web Server. Once the Web Server has been updated, the new content is delivered to the end user when they view it.
Cheers... Rick

Any way to deploy the new help files to multiple web servers through multiple environments?

You could do this by duplicating your existing single source layout and changing the path to which it publishes.

Hi,
You can also add multiple publishing directories to the same layout. (Webhelp, not CHM)
