How do I set up the checkboxes so the user can only select one of the options? I know how to do it in AcrobatPro 8, but can't figure out how to do it in LiveCycle. The help menu was not helpful.

Use radio buttons in an exclusion group and make the buttons square. You could use check boxes but you would have to code the deselection for the group.

Thanks. Once I figured out the exclusion group thing I just left them as checkboxes rather than converting the size to square. Makes more sense to the end user.
