The reason for this is so I can evaluate the camera's JPG's engine and learn what settings to use.
I'm not sure exactly what you are trying to accomplish by "evaluat[ing] the camer's JPG's engine", but there have been many threads here about getting RAW to look like JPG, and the usual conclusion that I come to is that this isn't a good use of your time, and is likely to be a very frustrating and unrewarding thing to do.

Yes Bridge allows you to look at metadata in depth. It is does not require purchasing a license and you and get a copy by downloading a trial of Photoshop.

In fact the whole metadata display seems a lot more developed in Bridge. In fact I dare say that from my the short time I spent with Bridge today, it seems a lot more capable as a cataloguing tool than LR3.
